Coconut tomato lentil soup

Ingredients
1 large onion chipped
2 garlic cloves minced
1 can chopped tomato
5 cups dry lentils
6 cups veggie stock
1 cup cilantro chopped
2 tsp curry powder
1 tsp cayenne pepper
1 tsp ginger
1 can coconut milk
salt and pepper to taste
Instructions
Sautee onion and garlic in a pan with some olive oil.
When translucent add can of chopped tomato, lentils, and condiments.
Simmer on medium-low heat until lentils ate cooked (aprox 20 min)
when cooked add coconut milk and cilantro, mix and rectify salt.
Simmer an extra 10 min.
Serve with fresh cilantro and lime.
