Coconut tomato lentil soup


  • 1 large onion chipped
  • 2 garlic cloves minced
  • 1 can chopped tomato
  • 5 cups dry lentils
  • 6 cups veggie stock
  • 1 cup cilantro chopped
  • 2 tsp curry powder
  • 1 tsp cayenne pepper
  • 1 tsp ginger
  • 1 can coconut milk
  • salt and pepper to taste


  1. Sautee onion and garlic in a pan with some olive oil.
  2. When translucent add can of chopped tomato, lentils, and condiments.
  3. Simmer on medium-low heat until lentils ate cooked (aprox 20 min)
  4. when cooked add coconut milk and cilantro, mix and rectify salt.
  5. Simmer an extra 10 min.
  6. Serve with fresh cilantro and lime.


you can always add extra liquid (stock or water) if you like =)

  • 1 cebolla grande picada
  • 2 dientes de ajo picados
  • 1 lata de tomate en cuadritos
  • 5 tazas de lentejas secas
  • 6 tazas caldo de verduras
  • 1 taza cilantro picado
  • 2 cdtas polvo de curry
  • 1 cda pimienta cayenne
  • 1 cdta jengibre
  • 1 lata leche de coco
  • sal y pimiento al gusto


  1. Dorar en un sarten con un poco de aceite de oliva la cebolla y el ajo.
  2. Cuando este traslucido, agregar el tomate, lentejas y especias.
  3. Hervir a fuego lento hasta que las lentejas esten cocidas (aprox 20 min)
  4. Cuando esten ya cocidas, agregar la leche de coco y el cilantro; mezclar y rectificar sal.
  5. Hervir a fuego lento otros 10 min extra.
  6. Servir con cilantro fresco y limon.


se puede agregar mas liquido (caldo o agua) a la receta si asi se desea =)
