Sweet Potato Poblano Enchiladas


  • 2 roasted and peeled sweet potato
  • 2 roasted peeled and seeded poblano (cut in small lpieces)
  • 1 cup canned black beans (rinsed, whole)
  • 1 can enchilada sauce
  • 5 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste
  • 1 tsp cumin
  • 10-12 Corn tortillas
  • Oil

Cilantro, onion and sour cream to serve


  1. Mash sweet potato, add beans and poblano.
  2. Add salt, pepper and cumin.
  3. Lightly fry tortillas in a bit of oil.
  4. Cover each tortilla in a bit of salsa before filling them.
  5. Fill and roll with sweet potato mix.
  6. Heat oven at 400. Set all enchiladas in pyrex and smother with enchilada sauce and cheese.
  7. Cover with aluminum foil and heat in oven until warm.
  8. Uncover until cheese is golden.



you can serve with cilantro, raw onion and sour cream on top! =)

Enchiladas de Camote y Poblano


  • 2 camotes rostizados y pelados.
  • 2 poblanos rostizados, pelados, sin semilla (cortar en cuadritos)
  • 1 taza frijoles negros de lata (enjuagados, enteros)
  • 1 lata salsa de enchiladas estilo tex-mex
  • 5 taza queso rayado (mozzarella o cheddar)
  • Sal y pimiento al gusto
  • 1 cdta comino
  • 10-12 tortillas maiz
  • Aceite
  • cilantro, cebolla y crema acida para servir


  1. Machaca el camote, agrega los frijoles y el poblano..
  2. Agrega la sal, pimiento y comino.
  3. Frie ligeramente las tortillas en un poco de aceite.
  4. Remoja ligeramente en la salsa las tortillas antes de enroller.
  5. Rellena las tortillas con la mezcla del camote..
  6. Calienta el horno a 400 F. coloca las enchiladas en un refractario, cubre con el resto de la salsa y el queso.
  7. Cubre con papel aluminio y calienta en el horno hasta que esten calientes.
  8. Quita el aluminio y gratina el queso.


Puedes servirlas con cebolla cilantro y crema acida!
