Moroccan Style Chickpea Soup

Ingredients

  • 2 cans rinsed chickpeas
  • 1 can crushed tomatoes
  • 4 cups veggie stock
  • 1 large onion chopped
  • 2 garlic cloves minced
  • 2 celery sticks minced
  • 1 large carrot peeled and minced
  • 1 tsp cumin
  • ½ tsp cinnamon
  • 1 tsp ginger
  • 1 tsp coriander
  • 1 cup chopped kale
  • pepper flakes to taste (depending on spice wanted)
  • salt to taste
  • cilantro and lime to serve.

Instructions

  1. Sautee with some olive oil onions and garlic.
  2. When translucent, add celery and carrots.
  3. Add tomato and spices.
  4. Add veggie stock & kale; rectify salt and cover. Simmer for about 10-15 min on medium-low heat.
  5. Serve with fresh cilantro and lime

Sopa de Garbanzos estilo Marroqui

Ingredientes

  • 2 latas garbanzos enjuagados
  • 1 lata tomates
  • 4 tazas caldo de verduras
  • 1 cebolla grande en cuadritos
  • 2 dientes de ajo picados
  • 2 ramas de apio en picadas
  • 1 zanahoria grande pelada y picada
  • 1 cdta comino
  • ½ cdta canela
  • 1 cdta jengibre
  • 1 cdta semilla de cilantro
  • 1 taza kale en pedazos
  • chile rojo al gusto (dependiendo que tan picante te guste)
  • sal al gusto
  • cilantro fresco y limon para servir

Instrucciones

  1. Dorar en un sarten con un poco de aceite de olive la cebolla y ajo.
  2. Cuando este traslucido, agregar la zanahoria y el apio.
  3. Agregar la lata de tomate y las especies.
  4. Agregar el caldo de verduras y el kale; rectificar la sal y tapar. Bajar fuego a medio-bajo y cocinar por aprox 10-15 min.
  5. Servir con cilantro y limon.
