White Vegetarian Chili

Ingredients

  • 1 onion chopped
  • 1 clove garlic minced
  • 1 green bell pepper chopped
  • 1 jalapeno pepper minced
  • ¼ cup flour
  • 1 tbs butter
  • 1 cup corn
  • 1 can pinto beans (rinsed)
  • 1 can chickpeas (rinsed)
  • 4 cups veggie stock
  • ½ bag Gardein meatless ground (or other vegetarian alternative)
  • 1 cup milk

Instructions

  1. On a large pan or dutch oven, sautee onion and garlic with some olive oil
  2. When translucent add bell pepper.
  3. Add the butter and melt, then add the flour and mix continuously until golden.
  4. Add veggie stock, the rest of the veggies and the soy meat.
  5. Bring to a boil and then lower heat and simmer for about 20 min.
  6. Add milk, mix and serve.

  • 1 cebolla picada
  • 1 diente de ajo picado
  • 1 pimiento morron verde picado
  • 1 jalapeno picado
  • ¼ taza harina
  • 1 cda mantequilla
  • 1 taza elote
  • 1 lata frijoles pintos (enjuagada)
  • 1 lata garbanzos (enjuagada)
  • 4 tazas caldo de verduras
  • ½ bolsa carne soya (utilize gardein)
  • 1 taza leche

Instrucciones

  1. En un sarten grande, dorar la cebolla y el ajo con un poco de aceite de olive.
  2. Cuando este cocida agregar el pimiento.
  3. Agregar la matequilla y derretir, despues agregar el harina y mezclar continuamente hasta que se dore.
  4. Agregar el caldo de verduras, el resto de los vegetales y la “carne”.
  5. Dejar que comienze a hervir, luego reducer el fuego y dejar que se cocine aprox 20 min.
  6. Agregar la leche, mezclar y servir.

Notas

servir con queso, crema, chiles frescos, cilantro
